It takes a lot of patience to be a cheesemaker but the outcome is so worth the wait! Our aged cheddar is made the same way as our regular cheddar cheese except it is aged a minimum of 18 months. This longer aging process gives the cheese the opportunity to break down more fats and proteins for a smoother texture and more developed flavor. Holding true to a cheddar you will still get the milky, sweet, buttery notes but they intensify on the palate with a browned butter finish.
